Emeril Lagasse, the king of Cajun cooking, is one of the very few chefs anywhere who command the single-name recognition that is the norm with pop music stars. Unfortunately, his restaurant in Miami Beach doesn't live up to his reputation. Slices of seared tuna with jalapeno wrapped in leaves of butter lettuce is the only good starter. Emeril's Creole Bouillabaisse is a good bet for fish lovers -- the fish and shellfish have a lovely hint of saffron in a slightly spicy broth. Most other dishes are overcooked or bland.
