Mediterranean palette: Whole hearts of baby romaine with creamy garlic dressing
Cous cous salad, artichokes, braised fennel, and preserved citrus

Latin palette: Tasting of two ceviches served with tostones, a citrus and ginger marinated grouper and spicy prawn with Spanish olives and olive oil

Indian/Middle Eastern palette: “Sabji” filled crispy poori, spiced sev, tamarind and date puree, saffron-honey yogurt and mint chutney

Mediterranean palette:
Herb-marinated and grilled line-caught swordfish with heirloom tomatoes and citrus-fennel salad

Latin palette:
Argentinean mixed grill with a mix of skirt steak, short ribs and chorizo with house chimichurri

Indian/Middle Eastern palette:
Your choice of three aromatic curries with spinach paneer, basmati rice and pickles
Chicken makhani with cilantro leaves and ginger
Sri Lankan chicken with coconut and cashews
Goa shrimp with coconut milk and chilies
Lamb korma with almond and tomatoes

Coconut curry flan and jicama salad with mango cabiar

Frozen passion fruit soufflé, haupia and citrus crakers
