Bonefish Grill first opened in St. Petersburg in 2000 with the goal of popularizing fish for the masses. It apparently succeeded, with about three dozen locations now in Florida alone as part of a national chain. Bonefish strikes the right balance by combining an energetic, bistro setting with fresh cuts of fish served a variety of ways. Grilled filets of salmon, snapper, Chilean sea bass, tuna and trout, among others, can be matched with four sauces. There are also steaks for those who want to swim upstream.
