To the American ear, Pio Bozzi’s thick Italian pronunciation of “Parma” sounded like “Palm,” so there you have it. Seventy-five years later, the Palm’s polished staff and outstanding wine list continue to impress, but the steaks and enormous lobsters have won them loyal following. The food is prepared simply because it needs no enhancement. Entree selections include aged prime rib, 36 oz. New York strip, lamb chop, Milanese, parmigiana, Marsala and various pasta dishes. Sharing is encouraged unless you're a hearty eater and even they've been known to split a steak.
