Canyon is famous for its prickly pear margarita, which trumps nearly everything, including the wines, served at the small bar or in the dining room. The inventive Southwestern food matches up well with the drink, which cools the spicey chilis and hot peppers used in the kitchen. Starters include the crispy blue corn calamari salad and the roasted red pepper crab cake. For entrees, there's filet mignon flavored with poblano, pesto and goat cheese, and the grilled shrimp and scallop burrito. The bar only seats about 10 and it fills up early for happy hour.
